After the wine fair in Pollença, Mallorca, the sun was still high as we strolled through the old town. I ordered this dish on impulse at a small restaurant right on the plaza – and it completely won me over. Pan con Tomate con Sardinas. Three ingredients. Endless character. What is Pan con Tomate? It is the iconic dish of Catalan summer cuisine – grated tomato on toasted bread, finished with high-quality olive oil and fleur de sel. With sardines, it becomes the ideal high-protein summer meal: light, aromatic, and genuinely good for you.

Ingredients for Pan con Tomate con Sardinas
serves 2
Base
2 thick slices of Pa de Pagès (or rustic sourdough)
2 ripe tomatoes (beef tomatoes are ideal)
1 garlic clove
Protein Layer
1 tin of sardines in olive oil
Finishing
½ lemon (zest + juice)
Chilli flakes
High-quality extra virgin olive oil
Fleur de sel (optional, but highly recommended)

Can I make this vegan? Replace the sardines with marinated, pan-fried aubergine or smoked tofu – the umami depth stays completely intact.
Why sardines? Sardines are one of the best natural sources of creatine and omega-3 fatty acids. High protein, high creatine – tastes like a holiday and does your body genuine good.
Which bread works best? Pa de Pagès is ideal, but any rustic sourdough or ciabatta works beautifully. The key: thick slices and a proper crust.
Instructions for Pan con Tomate con Sardinas
Heat your stainless steel pan over medium-high heat. Toast the bread dry on both sides until golden and the crust audibly cracks.
Rub the garlic clove directly onto the warm, golden crust. The heat opens the essential oils and the aroma soaks deep into the bread.
Halve the tomatoes and grate the flesh directly onto the bread using your zest grater. Discard the skin – the pulp soaks beautifully into the bread.
Never slice and layer the tomato – grating is the key to the right texture and juiciness.
Add the sardines with their own oil into the still-hot pan. 1–2 minutes, no more. Lightly caramelised, not broken apart. This intensifies the umami dramatically.
Crush the sardines loosely onto the bread. Zest the lemon directly over the top, then add a squeeze of juice. The acidity brightens the dish, makes it feel lighter and gently reduces the saltiness.
Add chilli flakes to taste. A generous pour of olive oil as a final layer. Serve directly on your cutting board – no plate needed, it simply looks better that way. Optional: fleur de sel.
