Creative Bruschetta with Grapefruit & Walnuts – Sweet, Savory & Crispy

No cream cheese in the fridge, but an old bread roll lying around? That’s how this unusual recipe came to life: Toasted bread slices with pan-seared grapefruit, warm cherry tomatoes, roasted walnuts, and a splash of red wine. It’s a little adventurous, a little rustic – and surprisingly delicious.
Ingredients for Bruscetta recipe with grapefruit
1 day-old bread roll
1 large red grapefruit
6 cherry tomatoes
1 garlic clove
50 g walnuts
2 tbsp olive oil
A splash of red wine (or grape juice/balsamic)
A pinch of coarse sea salt
Fresh thyme or basil (optional)
Optional
No wine? Use balsamic or juice
Want more sweetness? Add honey or maple syrup to the grapefruit

Instructions for Bruscetta recipe with grapefruit
1. Prepare bread
Cut bread roll into 1 cm slices and pan-fry in olive oil until crispy and golden.
2. Toast walnuts
Roughly chop and toast in a dry pan until fragrant.
3. Sear grapefruit
Segment the fruit and lightly sear in a hot pan to caramelize and reduce bitterness.
4. Tomato & garlic
Halve tomatoes, finely chop garlic. Sauté both in a pan, deglaze with a splash of wine, and let reduce slightly.
5. Assemble
Top the toasted bread slices with warm tomatoes, grapefruit, and walnuts. Add fresh herbs if desired.
6. Finish A pinch of sea salt – and your creative bruschetta is ready to serve.
