Bruschetta with Sun-Dried Tomatoes, Almonds, Citrus & Thyme

Picture this: A warm evening in Palermo, the rooftops glowing in golden light, a glass of wine in hand – and then this bruschetta. I discovered it on the rooftop terrace of a charming little restaurant in the heart of Sicily. The chef brought over slices of crusty bread, topped with sun-dried tomatoes in olive oil, toasted almonds, fresh thyme, and – the twist – slivers of dried orange and lemon peel. It was vibrant, aromatic, and completely unforgettable. I couldn’t help but thank the chef for this gem of a recipe. Back home, I knew I had to recreate it.

Ingredients for Bruschetta with sun-dired tomatoes, almonds, citrus & thyme


  • 4 slices of ciabatta or baguette, 

  • 8 sun-dried tomatoes in olive oil

  • 1 tsp each of finely chopped dried orange and lemon peel

  • 30 g chopped or slivered almonds

  • 1 garlic clove

  • 1–2 sprigs fresh thyme

  • 2 tbsp olive oil

  • salt and pepper.


Optional

A splash of lemon juice, chili oil, balsamic glaze, or a different nut like walnuts or pistachios.


Instructions for Bruschetta with sun-dired tomatoes, almonds, citrus & thyme

  • Fry the bread in a pan with a little olive oil until golden brown on both sides.

  • Then rub with the halved garlic clove. Finely slice the tomatoes and prepare the dried citrus peel.

  • Roast the almonds in a pan without fat until golden brown.


  • At the same time, finely chop the ingredients (tomatoes, citrus strips and almonds), mix together and place on the bread. Pluck the thyme and sprinkle on top, finish with salt, pepper and olive oil.


Tipp: a splash of lemon juice, chili oil, balsamic glaze, or a different nut like walnuts or pistachios.
