Ingredients for the char tartar, buttermilk sauce and gucomber:
200 g char fillet, deboned and skinned
1 tsp coarse salt
1 tsp sugar
1 tsp crushed black pepper
1 tsp crushed juniper berries
Fresh dill to taste
For seasoning:
1 small apple, diced
1 tbsp lemon juice
Zest of one lemon
Fresh dill, finely chopped
For the buttermilk sauce:
100 ml buttermilk
1 tbsp olive oil
Salt and pepper to taste
For decoration:
Cucumber ribbons
Apple ribbons
Radish slices
Fresh dill
Preparation char tartar, buttermilk sauce and gucomber:
Cure the whole char fillet with 5 g salt, 5 g sugar, 3 g pepper, and 3 g juniper in the refrigerator for one hour. Then rinse under cold water, pat dry, and cut into fine cubes. Tip: The remaining curing mixture can be reused for the next curing process.
Use a vegetable slicer with the appropriate attachment to cut the cucumber and apple into fine ribbons. Lightly salt the cucumber ribbons and let them sit briefly before rinsing and patting dry.
Combine the cured tartar with apple cubes, lemon juice, lemon zest, and fresh dill. Season to taste.
For the buttermilk sauce, mix buttermilk with olive oil and season with salt and pepper.
Place the tartar in the center of a plate, pour the buttermilk sauce around it, and garnish with the prepared cucumber ribbons, apple ribbons, radish slices, and dill.
