Ingredients for Melon Carpaccio

  • 1 ripe honeydew melon

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lime juice

  • 1 handful fresh mint leaves

  • 1 tsp honey

  • A pinch of salt and pepper

  • Optional: A few drops of balsamic glaze for garnish

  • Slice the melon Peel the honeydew melon, remove the seeds, and slice the fruit into very thin slices. Lay the slices flat on a large plate.
