FAQ
Can I substitute the pumpkin with something else?
Sweet potato or zucchini both work well instead of pumpkin, though with zucchini you should squeeze out excess water first. The dough should be shapeable but not too wet.
Which protein powder works best here?
A neutral plant-based protein powder made from pea or soy works best, since it won't overpower the savory flavor of the nuggets. Avoid vanilla or chocolate-flavored protein powders for this recipe.
Can I make these vegan?
Replace each egg with 1 tbsp ground flaxseed mixed with 3 tbsp water, letting it sit for 5 minutes to thicken. You can skip the mozzarella entirely or use a plant-based cheese alternative.
