Ingredients for Pumpkin Protein Nuggets
300g pumpkin, finely chopped or processed
100 g oats (finely ground)
50 g plant-based protein powder (e.g., pea or soy, neutral)
1 tsp garlic powder
1 tsp paprika powder (sweet)
1/2 tsp turmeric
2 tsp salt- 1/4 tsp black pepper
2 eggs
50 g grated mozzarella (optional, for extra protein and flavor)
2 tbsp olive oil
Instructions for Pumkin Protein Nuggets
Prepare and shape the nuggets
Process the pumpkin in a food processor until it has a dough-like texture.
In a bowl, mix oats, protein powder, garlic powder, paprika, turmeric, salt, and pepper.
Add eggs, olive oil, and grated mozzarella. Mix well until the dough is smooth. If too wet, add more oats.
Shape small nuggets by hand and place them on greased parchment paper.
Cook in the Air Fryer
Preheat the Air Fryer to 180°C (360°F). Place the nuggets in the basket without overlapping.
Cook for 20 minutes, flipping halfway through for even crispiness.
