· One sweet potato

· 250 g quark (preferably low-fat quark for a lighter version or full-fat quark for more creaminess)

· 1 small carrot, finely grated

· 1/4 cucumber, deseeded and finely diced

· A few radishes, finely chopped or grated

· 1/2 a bell pepper, cut into small cubes

· Fresh herbs of choice (e.g., parsley, dill, chives), finely chopped

· Salt and pepper to taste

· A splash of lemon juice or vinegar for a fresh note

· Optional: garlic, finely chopped

· Some olive oil

Ingredients for Guacamole

· 2 ripe avocados

· One small red onion, finely diced

· One ripe tomato, deseeded and diced (optional)

· Juice from one lime or lemon, to taste

· Some fresh coriander, chopped

· Salt and freshly ground black pepper, to taste

· One teaspoon cumin

· One teaspoon paprika


 

Preparation of Oven Sweet Potato and Raw Veggie Quark


1. We start the preparation of our baked sweet potato by preheating the oven to 200 degrees Celsius. While the oven is heating, we wash and dry the sweet potato thoroughly and prick it several times with a fork to allow steam to escape during baking.


2. Next, we place the sweet potato on a baking sheet lined with baking paper and slide it into the oven. Baking time varies depending on the size, approximately 45-60 minutes until the sweet potato is soft and can be easily pierced with a knife.


3. Meanwhile, we prepare the raw veggie quark. We take a bowl and mix the quark with the finely grated carrot, finely diced cucumber, chopped radishes, and bell pepper cubes.


4. We season the raw veggie quark with salt, pepper, and a splash of lemon juice or vinegar for a refreshing note. If we’ve opted for garlic, we add it now, finely chopped.


5. Finally, we add the finely chopped fresh herbs and some olive oil, mixing everything well. The quark can sit for a bit, allowing the flavors of the various ingredients to fully develop.


6. Once the sweet potato is baked, we take it out of the oven and cut it lengthwise. It’s important to be careful not to burn our fingers, as it will be very hot.

7. To finish, we fill the sweet potato halves with our aromatic raw veggie quark. The slightly sweet taste of the sweet potato combines excellently with the freshness and crunch of the raw veggie quark – a harmonious dish that pleases both the eye and the palate.

 

Preparation of Guacamole

1. First, we halve the avocados longitudinally and remove the pit by carefully tapping with a knife and twisting it out. Then we scoop the avocado flesh into a medium-sized bowl.


2. Using a fork, we mash the avocado flesh until it reaches our desired consistency. We like it a bit chunky to retain some texture.


3. We then add the finely diced red onion. If we choose to use the tomato, we also add it now, deseeded and diced.


4. For flavor, we squeeze the juice of a lime or lemon over the avocado-onion mixture and mix well to allow the flavors to develop.


5. To make our guacamole particularly aromatic, we chop some fresh coriander and sprinkle it over our guacamole, then blend everything well.


6. Next, we season our mixture with salt, freshly ground black pepper, a teaspoon of cumin, and a teaspoon of paprika, carefully folding in the ingredients until evenly distributed.
