Hey Flexis! Ready for a flexitarian feast? Today, we're serving up a culinary masterpiece: crispy sweet potato chips with tenderly cooked salmon and a refreshing lemon-quark dip. This delectable combination is a must-try for all flexitarians craving new flavor adventures.





Ingredients for salmon on sweet potato chips

  • 2 sweet potatoes

  • 2 tbsp rapeseed oil

  • 1 tsp paprika powder

  • Salt and pepper to taste

  • 1 tbsp sunflower or rapeseed oil (for sweet potato slices)

  • 1 bunch chives

  • 1 lemon

  • 2 salmon fillets

  • 1 tbsp butter or oil

  • A few sprigs of rosemary

  • 150 g quark

  • 50 g feta cheese

  • A handful of walnuts

  • A few tsp honey



For the Quark-Dip:

  • 150 g quark

  • 1 bunch chives

  • Salt and pepper to taste



Instructions for salmon on sweet potato chips

  • Preheat the oven to 200 degrees Celsius (fan).

  • Peel and slice the sweet potatoes. Toss the slices with rapeseed oil, paprika powder, salt, and pepper. (Tip: Opt for sunflower or rapeseed oil for optimal oven performance.) Bake the potato slices in the oven for approximately 20 minutes.

  • While the potatoes are baking, chop the chives and grate the zest of the lemon. Squeeze out the lemon juice.

  • Next, cook the salmon. Season it with salt and place a piece of butter or drizzle with oil and add rosemary. Bake in the oven for 10 minutes or cook in a pan for 5 minutes per side.

  • While everything is cooking, prepare the quark dip by combining quark, lemon juice, zest, chives, salt, and pepper.

  • To serve, arrange the sweet potato chips on plates, followed by a dollop of quark dip, then the salmon. Sprinkle with lemon zest, crumbled feta, walnuts, and drizzle with honey.
