Ingredients for Salade de la Provence
2 gilthead seabreams
2 oranges
200g raspberries
200g rice (preferably basmati or jasmine)
Olive oil for frying
Salt and pepper to taste
Instructions for Salade de la Provence
Cook the rice: Cook the rice according to the package instructions and then let it cool.
Bake the dorade: Heat some olive oil in a pan and fry the dorade on both sides until golden brown and cooked through. Season with salt and pepper.
Prepare the oranges and raspberries: Peel the oranges and divide them into individual segments. Wash the raspberries carefully under running water.
Arrange the salad: Spread the cooled rice on the plates. Place the orange segments and raspberries on top and place the baked gilthead in the middle.
