Are you looking for a light dish for lunch like gisch or salad, but not salad again like always? Then just have both!
A salad of calamari and blanched carrots is a very refreshing change for the medium hunger and the desire for something new.
A very simple and quickly prepared recipe. And yet a treat for yourself and a real eye-catcher.
Ingredients
200 g calamari
150 g carrots (different colours if available)
3 spring onions
1 leek
2 tbsp white wine vinegar
1 tbsp sweet mustard
3 tbsp rice vinegar
1 tbsp sesame seeds
2 tbsp roasted sesame oil
Instructions
First, heat two pots of water. Then cut the calamari and carrots into fine round slices.
Then put the calamari slices in boiling water with a good dash of vinegar and let them steep for about 1 minute.
Separately, put the carrots in boiling water for 1 minute and add a good pinch of salt to the vinegar.
Leave the calamari to cool and briefly rinse the carrots with cold water and place in a bowl.
In a cup/glass, mix the mustard, sesame seeds and vinegar well.
Then add the sauce to the calamari and carrots and mix well.
Finely slice the leek and spring onions and add them together with the sesame oil.
Then add a little salt and mix well.

Can I use pre-cooked calamari?
Yes, just skip the blanching step and toss it straight into the marinade with the carrots.
How long does the salad keep?
It stays good in the fridge for up to 2 days. The flavors actually get better after a few hours of marinating.
Can I substitute the rice vinegar?
White wine vinegar or apple cider vinegar both work as substitutes. Start with a bit less, since they're often sharper than rice vinegar.
