Frühlingsrolle mit Dip

Spring rolls are a popular Asian appetizer or snack enjoyed in many Asian countries, including China, Vietnam, Thailand, and Indonesia. Traditionally, they are often filled with ground pork and vegetables. For vegetarian or vegan preferences, spring rolls can easily be customized by replacing meat with tofu or additional vegetables. These rolls are commonly served with various dipping sauces, including sweet chili sauce, peanut sauce, soy sauce, or fish sauce with lime juice, which enhance their flavor.

Ingredients for Spring Rolls

  • 50g glass noodles

  • 10 sheets of frozen spring roll pastry

  • 1 carrot

  • ½ leek

  • ¼ celery

  • ¼ chinese cabbage

  • 1 handful of mung bean sprouts

  • 10g coriander

  • 10g mint

  • Zest of one lime

  • A splash of soy sauce

  • Canola oil for frying

  • Sesame oil for sautéing

Ingredients for Spring Roll Dip

  • 50g Kewpie mayonnaise (or regular mayonnaise)

  • 1 tsp Gochujang paste

  • Lime juice and zest of one lime

  • A dash of sesame oil

Preparation of Spring Rolls

  1. Cook the glass noodles according to package instructions, drain, and cut them into shorter pieces.

  2. Peel and thinly slice the carrot. Cut the leek into thin strips. Peel and thinly slice the celery.

  3. Thoroughly wash and finely chop the mung bean sprouts, coriander, and mint.

  4. Sauté the vegetables in a pan with a bit of sesame oil and deglaze with soy sauce. Then mix everything together.

  5. Fill the spring roll pastry with a generous spoonful of the filling. Roll them tightly.

  6. Heat canola oil in a pot or pan to about 180 degrees Celsius (356 degrees Fahrenheit).

  7. Fry the prepared spring rolls in small batches until they are golden brown and crispy. This usually takes about 3-5 minutes per roll.

  8. Place the finished spring rolls on kitchen paper to drain excess oil.

  9. For the dip, combine all the ingredients in a bowl.
