Cook the glass noodles according to package instructions, drain, and cut them into shorter pieces.
Peel and thinly slice the carrot. Cut the leek into thin strips. Peel and thinly slice the celery.
Thoroughly wash and finely chop the mung bean sprouts, coriander, and mint.
Sauté the vegetables in a pan with a bit of sesame oil and deglaze with soy sauce. Then mix everything together.
Fill the spring roll pastry with a generous spoonful of the filling. Roll them tightly.
Heat canola oil in a pot or pan to about 180 degrees Celsius (356 degrees Fahrenheit).
Fry the prepared spring rolls in small batches until they are golden brown and crispy. This usually takes about 3-5 minutes per roll.
Place the finished spring rolls on kitchen paper to drain excess oil.
For the dip, combine all the ingredients in a bowl.
