Ingredients for Red Lentil Dal

300g red lentils
600ml vegetable broth
300g canned tomatoes
250ml coconut milk
2 medium-sized onions, finely chopped
2 cloves of garlic, minced
1 piece of fresh ginger, peeled and minced
10 cherry tomatoes, quartered
1 tsp cumin
1 tsp turmeric
1 tsp garam masala
1 tsp paprika powder
Salt to taste
Lime juice and lime zest (optional)
Fresh cilantro for garnish
Rice or Naan bread for serving
Preparation of Red Lentil Dal
Begin by thoroughly rinsing the red lentils in a sieve until the water runs clear. Set them aside.
Peel and finely chop the onions, garlic cloves, and fresh ginger.
Heat some oil in a large pot and sauté the chopped onions, garlic, and ginger until they turn golden brown and aromatic. Add cumin, turmeric, garam masala, and paprika powder to the pan and briefly toast them to enhance the flavors.
Next, add the canned tomatoes to the pan and stir everything well. Add the rinsed red lentils to the pot and mix.
Pour in the coconut milk and vegetable broth, thoroughly combining all the ingredients.
Bring the Dal to a boil and then reduce the heat to let it simmer gently. Add the quartered cherry tomatoes.
Allow the Dal to simmer for about 20-25 minutes until the lentils are soft and the consistency thickens, stirring occasionally.
Finally, season the Dal with fresh lime juice, lime zest, and salt to taste.
