Make your own pasta - Truffle pasta

Ingredients

Pasta dough

  • 400g flour

  • 4 eggs (of which 1 yolk)

  • 10g salt

  • 20 ml extra virgin organic olive oil

Truffle sauce

  • 100ml white wine

  • 100ml aniseed schnapps (e.g. Pastis /Ouzo)

  • 400ml vegetable stock

  • 200ml cream

  • 3 tsp truffle butter

Instructions

  • In a large mixing bowl, mix 250 g flour and 10 g salt. Make a well in the centre and beat in the 4 eggs.


  • Beat the eggs with a fork and gradually stir in the flour from the sides of the well. Once the dough comes together, knead by hand or with a food processor fitted with a dough hook. You are also welcome to use a machine here. Of course, there's more love in it by hand ;)

  • Add 1 tablespoon of olive oil to the dough, being careful not to add too much oil or the dough will be too wet. If necessary, add more flour to firm up the dough.

  • Shape the dough into a ball and wrap in cling film. Let it rest in the fridge for 30 minutes. All dough needs to rest. This helps to create a soft and supple dough.


  • While the dough is resting, we take care of the truffle sauce. To do this, reduce 1/4 cup white wine, 1/4 cup aniseed schnapps (ouzo) and 1 cup vegetable stock in a saucepan over high heat.

  • After the dough has rested, roll it out with a pasta machine to the desired thickness. Max and I decided to make linguine, so we roll out the dough thicker. Finally, we cut the pasta into the desired shape with the machine.

  • While the sauce is still simmering, add 1/4 cup of cream and 2 tablespoons of truffle butter. Use a hand blender to obtain a smooth and creamy sauce.

Note: It is important to keep an eye on the truffle sauce and not let it boil after adding the cream and truffle butter, otherwise the sauce may break down.




  • Bring a pot of salted water to the boil and cook the pasta for 2 minutes. Remember, the pasta is fresh and only needs to be in the water for a short time. Drain the pasta and add to the truffle sauce.

  • Then arrange on a plate and grate fresh truffle over the top if desired. Serve and enjoy!
