Pasta Alla Norma - Comfort Dish

Good morning everyone. I am glad that we meet today for hangover breakfast. On offer today we have an absolute comfort pasta that clears away the weird taste of yesterday. Plus some spiciness to open the pores so the remaining alcohol can evaporate as well. Of course, this is again a dish to share with the flat or your beloved.

Ingredients

  • 2 aubergine (steam or oven)

  • 1 chilli

  • 1 onion

  • 50g parmesan

  • 75g rocket

  • 100g ricotta

  • 400g Parpadelle wholemeal pasta

  • 3 Mutti whole tomato can

  • Oregano

  • 2 cloves of garlic

  • 1 hand basil

  • Salt Pepper


 




Instructions

Put the water on to boil.

Cut the eggplant into quarters and add salt, then steam over boiling water for 20 minutes.


While this is going on, fry the onions until they are hot. Salt them at the beginning. Then add the garlic and let them brown slightly. Once they are translucent, deglaze with white wine reduce this and add the tomatoes. Salt everything again, turn down the heat and simmer on a low heat.

After about 10 minutes add two teaspoons of sugar and squeeze half a lemon.

After that, we press the tomatoes in the pan and everything again and add two tablespoons of dried oregano.

After another 10 minutes you can take out the eggplant and cut it into small cubes. You can tell if they are cooked properly long enough in which you can pull threads. Then at the moment is perfect.

Then you can use the already heated water to cook our noodles in it.

Now we add the small cubes and the chili to the tomato broth. Then we chop the basil and add it.


We also take some of the pasta water and add about a cup of it to the tomato sauce. Everything simmers on a low heat.


Just before the pasta is ready, add the ricotta, arugula and pasta to the sauce. Everything continues to simmer for 1-2 minutes. The pasta will absorb the flavor and the ricotta will melt. Mhmmmm.

Now it's time to serve.


Resumé

Oh man what a hot dish! The juicy tomato broth refreshes and the chili makes me sweat slightly. Phew, afterwards I could breathe freely again. All together an absolute comfort food to share and vegetarian to boot. Easy to prepare and quickly made.
