Baba Ghanoush is also like the hummus an absolutely delicious dip from the oriental cuisine. Here, too, you get with only a few ingredients to a brilliant vegan spread. Here the main ingredient is a grilled / braised eggplant. As a vegan dip, it tastes good with fresh vegetable sticks or is a super souvenir at barbecues. When prepared, Baba Ghanoush takes on a natural BBQ flavor, making it the ideal substitute for store-bought BBQ sauces. An important ingredient of Baba Ghanoush is the tahini paste. It is made from finely ground sesame seeds. In my last vacation in Israel, you could see such a sesame mill in many markets and then taste the fresh sesame paste.
Ingredients
2 eggplant(s), about 500g
2 cloves of garlic
3 tablespoons of sesame paste (tahini)
3EL lemon juice
2 tablespoons olive oil
Some cumin and paprika powder
Fresh parsley for decoration
Salt/Pepper
Instructions
To create a good BBQ aroma, grill the eggplants with a strong color on the charcoal grill. In this process, the eggplants may partially take on a black color (later, only the stewed inner flesh of the eggplant is used).
If you do not have a grill, simply grill the eggplants classically in the oven at 180 degrees for about half an hour until they are soft. Let the braised eggplants cool down only briefly and cut them in half while they are still warm. Now scrape out the inside of the eggplant. The flesh is now mixed with the remaining ingredients with a hand blender to a homogeneous mass.
Resumé
Besides hummus also a very good dip that is incredibly aromatic. Ideal we find from food for flexitarians, because it is completely vegan and very easy to prepare.
