Ingredients for Fennel Salad with Orange
(serves 2–3)

For the salad
1 large fennel bulb with fronds
1 orange
1 blood orange
3–4 radishes
1 handful fresh mint
1 tbsp pine nuts
1 tbsp walnuts
For the summer dressing
Juice of 1 orange (or a mix of orange and blood orange)
1 tsp maple syrup or honey
1 tsp white wine vinegar or apple cider vinegar
2 tbsp olive oil
Salt and freshly ground pepper
Preperation for Fennel Salad with Orange

Begin by prepping the fennel. Wash the bulb thoroughly, remove the core, and slice it as thinly as possible using a mandoline or a sharp knife. Set the green fennel fronds aside and chop them roughly.
Peel the orange and blood orange with a sharp knife, removing all the white pith. Carefully cut out the segments (supremes) and collect any juice that escapes – you’ll use it for the dressing.
Wash the radishes and slice them into very thin rounds.
In a small bowl, whisk together the collected citrus juice, maple syrup, vinegar, olive oil, salt and pepper to create the dressing. Adjust to taste – it should be fresh, slightly sweet and tangy.
Combine the shaved fennel, orange segments and radish slices in a large mixing bowl. Tear the mint leaves and add them along with the chopped fennel fronds. Pour the dressing over the salad and toss gently to combine.
Toast the pine nuts and chopped walnuts in a dry pan until golden and fragrant. Sprinkle them over the salad just before serving.
