
You get up, the sun is shining on your face and the night is still cold. It is spring. Finally, sunshine again! Summer is on its way and with it new dishes and inspiration for flexitarians. The last few days have been extremely warm in our country and a brief hint of summer could be felt. The neighbour has already fired up the barbecue and the warmth is already pushing me into the beer garden. But we already have the perfect new dish for you. Fresh tomatoes with a hint of Tuscany and everything on a protein-rich quark combination. You will love it!
Ingredients

500g cocktail tomatoes
500g low-fat quark
250g Greek yoghurt
250g sour cream/creme fraiche
50g roasted pistachios
3 cloves garlic
1 bunch rosemary & thyme & chives
salt pepper
Zubereitung
First, heat a large frying pan and add olive oil.
Then cut some of the cocktail tomatoes in half and slice them down the middle.

Then crush the garlic, remove the skin and chop it very finely.
Once the oil is hot enough, we add the garlic and let it heat up with the herbs on a low heat. The oil extracts all the aromas that the tomatoes will later bathe in.
We now let this fry in the pan for about 10-15 minutes until the tomatoes are mushy. As soon as the tomatoes give way and the water runs out, we crush a few of them very lightly.
In the meantime, we make the protein dip. Put the low-fat quark, yoghurt and crème fraîche in a bowl. Add a little salt and pepper, lemon juice and some chives if needed. We mix everything into a homogeneous mass and season to taste. Feel free to add some garlic here ;)
In the meantime, the tomatoes should be ready. To serve, I recommend putting a big spoonful of our curd base on the plate and on top of it the nice lukewarm tomatoes. Serve with freshly toasted white bread and a few pistachios on top.
