Spinach Salmon Citrus Pasta

Simply once again craving for fat! On that day, my desire for a little more fat was clearly noticeable. My body was really hungry for it and wanted something tasty. The whole day was also very exhausting and energy consuming. And somehow I had the whole time a craving for pasta. Refrigerator open, still some salmon there. Top left, I discover some cream and already comes to me the idea, salmon pasta! But this time I like to add something new, this time we put some spinach in it! Spinach salmon pasta from

food for flexitarians.


 



Ingredients

  • 250g salmon

  • 200g spinach

  • ½ lemon

  • 250 ml cream

  • 250 ml oat cuisine

  • 50 ml white wine

  • 1 onion

  • 1 carrot

  • 3 cloves of garlic

  • 1 bunch of dill


Instructions

First the onion! Cut the onions into brunoise, chop the carrots and squeeze the garlic. Salt everything a bit and sauté very slowly with olive oil or optional butter. It is important to keep the heat low so that we can extract all the sweetness and flavour from the onions and carrots.


As soon as the onions start to brown, we add the salmon. Fry it on both sides until it is golden brown and then remove it from the pan as it is.


At the same time we boil our pasta and add enough salt to the water.


Next, we add the spinach. Please do not forget to wash it beforehand, because often there is still sand in the package. Once the spinach has cooked down, we deglaze the whole pan with white wine. By deglazing and reducing, we take all the nice roasted flavours into the sauce later. #maillard-reaction


Now we add the cream and Oat Cuisine to the pan. I like to mix the two components, as cream is just too greasy for me and I like the dish lighter. To this we add the juice of half a lemon, some zest and 3 slices of it in the sauce. Add salt and pepper, and don't forget to season. Quickly chop the herbs and let them simmer.


Stir constantly and reduce slowly. In between add some pasta water for the taste in the starch.

Finally, we add the salmon to the pan and pack the pasta about 2 minutes before al dente. Mix everything well and simmer together briefly.

Garnish, share and enjoy. We're already done with our light flavour bomb.



Resumé

The salmon pasta has always won me over, plus the spinach. All in all, a very fresh and intense meal. It is especially nice to share with friends. You have most of the ingredients at home, but a quick visit to the supermarket is also enough. The dish takes a little longer at about 30 minutes, but is very relaxed doable.
