"Hola Chicas!" That's how you spread good vibes directly and also the soul will enjoy the vegetarian tacos. We from food for flexitarians would like to show you an "el classico" of the Spanish cuisine. With this dish it is very easy for me to do without animal products and instead resort to vegetables. Definitely a dish for family and friends. A glass of wine with the tacos and the good mood comes all by itself.
Ingredients
200g vegetarian gyros
150g lettuce
10 taco shells
2 red onion
2 garlic cloves
1 avocado
1 tomato
1 bunch green asparagus
1 carrot
1 zucchini
1 ginger
1 red chili
Some fresh coriander
Lime juice and lime zest of one lime
salt/pepper
Canola oil

Instructions
First peel and chop an onion and the carrot. Sauté both with a little oil and the garlic. Cut off the lower third of the asparagus and then wash the asparagus and the zucchini. In the next step, cut the zucchini and asparagus into bite-sized pieces and fry them together.
Then season the vegetarian gyros with salt, pepper, the finely chopped red chili and finely chopped ginger and sauté until hot.
In the meantime, you can preheat the oven to 160 degrees and then warm up your taco shells. Wash the lettuce and dry it in a salad spinner.
For the guacamole, we peel the onion and cut it into brunoise. Cut the avocado in half and scoop out the flesh with a spoon. Then mash it with a fork and put it in a bowl. Wash the tomato and cut it into small pieces. Now add the tomato pieces, the onion brunoise, the lime juice and the lime zest to the avocado and mix everything. Season to taste with salt and pepper.
After you have prepared everything, you can fill the tacos to your desire and enjoy them.
