Ingredients Puff Pastry Rolls with Spinach
180 g feta cheese
1 handful of walnuts (roughly chopped)
1 pinch of vegetable broth powder (vegetarian)
1 egg, separated
1 garlic clove (pressed)
1/2 tsp salt
A little pepper
1 tbsp milk
1 sheet of puff pastry
1 tbsp sesame seeds for sprinkling
1 handful of fresh spinach

1️⃣ Preheat the oven to 160°C (fan setting).
2️⃣ Sauté the spinach together with the pressed garlic in a pan until wilted. Let it cool and drain any excess liquid.
3️⃣ Separate the egg. Mix the egg yolk with milk and set aside.
4️⃣ Combine the egg white with crumbled feta, chopped walnuts, vegetable broth powder, salt, and pepper. Fold in the cooled spinach.
5️⃣ Spread the mixture evenly over the puff pastry and roll it up carefully.
6️⃣ Cut the roll into about 10 equal pieces and place them on a baking tray lined with parchment paper. Gently flatten each piece.
7️⃣ Brush the tops with the egg yolk-milk mixture and sprinkle with sesame seeds.
8️⃣ Bake for 30–35 minutes until golden brown, crisp, and fragrant.
