FAQ

How do I stop the guacamole from turning brown?

Mix in plenty of lime juice and press cling film directly onto the surface so no air reaches it. Assembled boats are best served right away, as avocado oxidises quickly once exposed.

Can I prepare the boats in advance?

You can prep the components separately — chop the veggies and keep the avocado whole with the pit until shortly before serving. Fill the lettuce cups or pepper halves just before eating so they stay crisp and fresh.

What can I use instead of lettuce cups?

Halved bell peppers make sturdy boats, and mini cucumbers or endive leaves work too. For a heartier version, spoon the guacamole onto toasted bread or into small tortilla cups.
