Cinnamon rolls are more than just a pastry – they’re a cozy moment of comfort. During my second trip to Norway this summer, between long hikes on the Lofoten Islands, I made it my mission to explore every local bakery.
What truly surprised me was how balanced and mild their cinnamon rolls tasted — not overly sweet, just naturally delicious. This moist cinnamon roll recipe captures exactly that Nordic essence: less sugar, more depth of flavor, and a wholesome softness that feels like a warm hug from the oven.
Ingredients Moist Cinnamon Roll Recipe
For the dough
500 g spelt flour (type 630)
250 ml lukewarm milk
80 g soft butter
60 g raw or coconut sugar
1 cube fresh yeast (or 1 packet dry yeast)
1 egg
1 pinch of salt
For the filling:
60 g soft butter
3 tbsp cinnamon
3 tbsp raw sugar
1 handful of fresh or frozen raspberries
2 tbsp dark chocolate sprinkles (optional)
Tipp
3 tbsp cream – drizzle over the rolls before baking for extra moisture
Instructions Moist Cinnamon Roll Recipe
Warm the milk gently, dissolve the yeast and sugar, and let it rest for about 10 minutes.
Add butter, egg, and salt, then gradually mix in the flour until smooth. Let the dough rise for 60 minutes in a warm place.
Mix butter, cinnamon, and sugar until creamy to prepare the filling.
Roll out the dough (about 40x30 cm), spread the filling evenly, and sprinkle with raspberries and chocolate sprinkles.
Roll up the dough tightly, slice into 10–12 pieces, and place them on a baking tray.
Optionally drizzle with cream and bake at 180°C (350°F) for 25 minutes until golden brown.
Tipp
Spelt flour is rich in minerals and provides a slightly nutty flavor, making it a wholesome alternative to white flour. Thanks to the natural sweetness from raspberries and less added sugar, this moist cinnamon roll recipe is perfect for mindful eaters and flexitarians who love balanced indulgence.

Soft, golden, and fragrant — a delightful treat for cozy Sundays, brunch with friends, or any time you crave something sweet yet balanced. It’s proof that conscious baking can be both satisfying and indulgent.
