Updated: Feb 24, 2023

Are there still a lot of potatoes left over from yesterday? It's always the same as with pasta rice, you always cook too much of it... But the great thing is that you can upgrade them again the next day to roast potatoes. But our fried potatoes here are made in the oven with little oil and all the crispier for it!

Ingredients

  • 500 g boiled potatoes

  • 2 garlic cloves

  • 20 g butter (optional)

  • 30 ml sunflower oil

  • 1 bunch rosemary & thyme

  • 2 tbsp salt & pepper / cumin / semolina

Instructions

  • First of all, as always, turn on the oven. 250 degrees Celsius convection oven

  • Then we can get into the potatoes. If you don't have potatoes from the day before, you could simply boil them in water for about 50-60 minutes and then use them. Cut the potatoes into small cubes as you like.

  • Now we add salt, pepper, caraway seeds and semolina to the potatoes and mix them together so that they all absorb nicely.

  • Just before we put the potatoes in the oven, we put the garlic and herbs on a baking tray with the oil. Optionally add a knob of butter for flavour. The oil will extract all the flavours and the potatoes will bathe in it later.

  • Once the oven is hot, we put the heating oil on the potatoes, mix them together and put everything in the oven. This should now be on the highest setting and in about 15 minutes he will have super crispy potato wedges.

Resumé

It's quick, easy and gives you lots of energy. Recycle the old food from yesterday and share the potato wedges with your partner. Crispy vegan potato wedges for everyone! Add to that less oil than in the frying pan and you definitely have less to clean!
