Ingredients


  • 250g wheat flour

  • 200ml milk

  • 2 tablespoons sugar

  • 2TL baking powder

  • 2 eggs

  • Lemon zest of an organic lemon

  • A pinch of salt

  • Some butter for frying


Instructions

  1. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and lemon zest. Mix until well combined.

  2. In a separate bowl, whisk together the milk and eggs. Add the wet ingredients to the dry ingredients and mix until a smooth batter forms.

  3. Heat a large frying pan over medium heat and add a pat of butter. Once the butter has melted, scoop about 2 tablespoons of batter onto the pan for each pancake.

  4. Cook the pancakes until bubbles form on the surface, then flip and cook until both sides are golden brown. Repeat with the remaining batter, adding more butter to the pan as needed.

  5. While the pancakes are cooking, wash and prepare the fruit by cutting it into small pieces if necessary.

  6. Once all the pancakes are cooked, whip the cream until stiff peaks form.

  7. To assemble, stack the pancakes on a plate and top with the fresh fruit and whipped cream. Serve immediately and enjoy!
