Burger with a difference - The eggplant burger

I love eggplant, but never know what to do with it. It is such a multifaceted vegetable. I got to know the eggplant in Lebanese cuisine and immediately appreciated it. Especially as a secret ingredient in vegan dishes it is used. The eggplant is very versatile and that's why we use it as a bun for our vegan burger. For this we place vegan minced meat between 2 roasted slices of eggplant and refine them later with a few spices. Finally ne horny alternative to the shabby bun from the supermarket. Try it out and get inspired by food for flexitarians!
Ingredients
1 eggplant
1 tomato
1 Cucumber
1 red onion
1 lettuce
150g vegan minced meat or vegan burger patties
1 package of vegan cheese
Handful of fresh parsley
Some ketchup/mustard
Some paprika powder
Salt/pepper
Instructions
Slice the eggplant and then salt, pepper and season with paprika. Fry the eggplant slices briefly and then place on the side. Season the vegan minced meat (in patty form) or the vegan burger patties with salt, pepper and paprika powder.
While the patties are sizzling in the pan, we slice the remaining vegetables, except for the lettuce, and set them aside until we assemble the burger. From the lettuce we pluck individual leaves, wash them and dry them with the help of a salad spinner.
Assembling a burger is familiar to most people and here everyone is free to do as they please. No carb - no problem. Bite into it and enjoy!

How do I prepare the eggplant so it holds together as a bun?
Slice the eggplant into thick rounds, salt them lightly to draw out excess moisture, then grill or pan-fry until tender but still firm enough to hold its shape.
Can I use a different vegan patty if I can't find vegan minced meat?
Yes, any store-bought vegan burger patty or even a homemade bean or lentil patty works well as a substitute. Make sure it's well-seasoned since the eggplant is fairly mild.
Can I make this burger without the vegan cheese?
Absolutely, the burger still tastes great without cheese — the eggplant, vegetables, and sauces provide plenty of flavor and texture on their own.
