Spinat Shakshuka with Mozzarella - Mediteranean way

The last few days, I strolled through the streets and spotted a cute little restaurant. I took a quick look at the menu and decided to go in. They got me. The meal of the day was Shakshuka. It was really precarious, and I Had to recook it. Actually, Shakshuka is a Middle Eastern dish, has a lot of healthy ingredients and is vegetarian. I felt great afterwards, better than eating a burger, haha. Anyways, I don't want to waste too much time talking about the restaurant, more about the dish. I looked up some easy and conventional recipes with ingredients that you might have at home. Last time i prepared this dish for us, we created a traditional version. this time we’ll show you a medieranean spinch shashuka. Here we go!

Ingredients
250g mushrooms
150g Spinach
1 courgette
2 garlic
2 onions
1 mozzarella
3 eggs
50ml oil
20 g butter
salt/pepper
2tl cumin
2tl paprika powder
1 paprika
1/2 bunch coriander
Instructions
First, we chop everything finely and start with heating the oil and a little piece of butter in the pan. Put in the chopped onions, garlic and mushrooms.
Then you add the zucchini and the spinach. Cover the pan and gently turn over the Spinach. It will reduce by half.
Add the herbs and season everything.
In the next step, you create 3 little wholes in the tomato sauce for the eggs. Crack the eggs and put them into the ready-made place. Cover the pan and reduce the heat.
You can now add the Mozzarella. It will melt a bit and make it extra creamy.
In the end, you chop some cilantro and add it to the top. Finish.

This meal is to share! It's delicious, and you can enjoy it during the whole day. Appetizer or dinner. It tastes perfect, and I really encourage you to cook it. For the spices, I recommend you to talk with a local Arab shop to get the best quality. The owner might also give you his cooking tips to cook :)
