Romana parmesan croutons and chicken? - The caesar salad

One of the most internationally known salads ever. The Caesar salad. The main ingredient is romaine lettuce or "romaine lettuce". As perhaps many think, the name is quite clear as an allusion to the great Roman statesman, general Gaius Julius CAESAR. However, it was invented by an Italian who owned a restaurant and bar in Mexico. His name was Caesar Cardini. Word of his salad spread quickly, and today it can be found on numerous menus. Mostly it is still served with crôutons and parmesan. For our flexitarian Food Blog therefore also so important, because he simply always tastes super. As a side dish or even as a main meal. Have fun with the inspiration!


Ingredients

  • 2 romaine lettuce hearts

  • 1 clove of garlic

  • 2 tsp lemon juice

  • 1/2 tsp hot mustard

  • 2 egg fresh

  • 100ml olive oil

  • A dash of cream

  • salt, pepper, sugar

  • 25g parmesan

  • 50ml water

Instructions

Peel and coarsely chop the garlic. Separate the eggs and put the yolk in a high measuring cup. Add all remaining ingredients to the measuring cup. Blend with a hand blender, as you would do for a mayonnaise, until you have a smooth emulsion. Wash the romaine lettuce and dry it in a salad spinner. Then chop coarsely. Marinate the lettuce with the dressing.

If you still want, you can sauté chicken with it. As a vegetarian alternative, avocado is also wonderful.
