Ingredients for Parmesan Chicken Alfredo Foodprep
For the marinated chicken
2 chicken breasts
Juice of half a lemon
1 tsp salt
1 tsp vegetable broth powder
1 tbsp olive oil
For the Alfredo side dish
300 g broccoli, cut into florets
50 g sun-dried tomatoes, sliced
100 ml milk or plant-based alternative
50 g cream cheese (light or vegan)
1 tsp garlic powder
1 tsp lemon juice
1 tbsp olive oil
Salt and pepper
30 g freshly grated Parmesan

Marinate and cook the chicken
Marinate chicken breasts with lemon juice, salt, vegetable broth powder, and olive oil.
Let sit for at least 15 minutes, longer for more flavor.
Cook in the Air Fryer at 180°C (350°F) for 12-15 minutes.
Flip halfway through for even cooking.
Prepare the Alfredo sauce
Blanch broccoli in boiling salted water for 2-3 minutes, then rinse with cold water.
Heat milk, cream cheese, garlic powder, lemon juice, olive oil, salt and pepper in a pan until creamy.
Add the broccoli and sun-dried tomatoes to the Alfredo sauce and mix well.
Pack everything for meal prep
Place the cooked chicken on top of the Alfredo broccoli mix.
Grate fresh Parmesan directly into the meal prep box.
Keeps fresh in the fridge for up to three days.
