Octopus,Bean and Pepper - what a combination!

Today we at food for flexitarians are showing you a dish from the Mediterranean. The cuisine in this area is known for its light and Mediterranean way of cooking. Many herbs and a gentle preparation of the food makes the cuisine particularly attractive for us. Octopus is new territory for many amateur cooks, but we will show you how easy it is to prepare and what a delicacy it is.

Ingredients

  • 2.5 kg octopus

  • 100g celery stalks

  • 5 sprigs lemon thyme

  • 1 bay leaf

  • 1 tsp white peppercorns

  • 1 clove garlic

  • Water to boil


Paprika puree

  • 5 red pointed peppers

  • 2 shallots

  • 1 tsp tomato puree

  • 1 clove garlic

  • 1 thyme

  • 100ml vegetable stock

  • Olive oil for frying

  • Salt and pepper


Beans

  • 100g beans

  • 1 tbsp butter

  • Salt and pepper

  • Some savory

  • Water for blanching


Instructions

Octopus

Bring a large saucepan to the boil with water and a little salt. In the meantime, wash and roughly chop the celery. Once the water has come to the boil, add the octopus and the rest of the ingredients and turn down the heat (the octopus should no longer boil in the bubbling water). Now leave to infuse for about 40 minutes. You can tell if the octopus is cooked by poking it with a needle or knife. If it comes out easily, it is done. Now remove the octopus and leave to cool.


Paprika puree

First peel the shallot and garlic. Chop them coarsely. Sauté the shallots and garlic in olive oil until translucent. In the meantime, wash and chop the peppers and add them to the shallots in the pan. Season with salt and pepper and add the fresh thyme. Now tomato everything and deglaze with vegetable stock. Once the peppers have stewed until soft, blend everything to a puree with a hand blender.


Zubereitung Bohnen

For the beans, first put a pot of boiling water on to heat. This is also well salted. Prepare a bowl with ice water. Now wash the beans and cut off the ends. Now we can blanch the beans in the water and then rinse them in ice water. In a pan, heat the butter with a little water and the savoury. Sauté the beans in it for about 2 minutes. Season with salt and pepper.



Resumé

All three components go wonderfully together and are a real treat for the palate. Add a glass of white wine and you'll feel like you're on holiday. What more could you want? Have fun cooking it.
