omemade Obazda: The Traditional Bavarian Dish to Enjoy in a Beer Garden

Enjoy a beautiful summer evening in a beer garden with homemade Obazda. Save money by making the traditional Bavarian dish yourself and sharing with friends. Ingredients

  • 200g camembert

  • 100 g quark

  • 100g yoghurt

  • 100g sour cream

  • 50g soft butter

  • ½ red onion

  • 1 bunch chives

  • 1 tsp paprika powder (sweet)

  • 1 tsp caraway

  • ½ tsp salt

  • 1 pinch pepper










Instructions

  • First we start to pluck the soft cheese with a spoon. This leads to more pleasant pieces and a finer mouthfeel.

  • Then we add the paprika, caraway and salt and mash everything with a fork. The mashing makes for a creamier experience. It is precisely from this process that the name "Obazn" for lightly pressed comes.

  • Now we can cut off the front white onion from the chives, chop it into cubes and add it. We save the rest of the green onion as a topping for later.

  • Now we add 200 g quark and 100 g yoghurt and sour cream. The latter provides the freshness.

  • Then we can mix everything together. Of course, it would be best to mix by hand, but for convenience reasons, I use a mixer here. Now add a tablespoon of beer. It's important not to overdo it, because that can quickly backfire and Bavarian Obazda becomes too liquid.


  • Finally, season everything to taste with a pinch of pepper and, if you like, a little lemon juice. To serve, chop the remaining green chives or add red onions on top. Bon app!
