
Today's recipe is not vegetarian or vegan. We flexitarians sometimes need our little dose of meat. I came up with a great little creation for this and you already know it. They are meatballs. But we also packed a lot of greens into them and mixed them with wonderful lamb. A little different, but much more digestible. LOVE IT!
Ingredients

500g minced lamb
100g rocket & wild herbs
20g roasted pistachios
1 courgette
1 onion
2 garlic cloves
½ lime
1 tbsp salt& pepper& cumin& vegeta
Instructions
We start by putting the mince in a large bowl. We season this immediately with salt, pepper, cumin and Vegeta. Vegeta is a little trick from Balkan cuisine and is now available in every supermarket, just ask.

We cut the courgettes, rocket and onion into very small pieces. We mix the pistachios briefly or crush them with the side of a knife (they add a little crunch). Chop the garlic and add it. Put everything into the bowl and mix.
Now we form small balls. Our quantity should make about 15-20 balls. Perfect for 3-4 people.
As soon as the pan is hot, we put them in. Fry for about 5 minutes on each side. Drain and serve.
Resumé
Packing and combining is up to you. As you can see, I made a taco with Ajvar and a mixed relish. This is simply my personal favourite. Of course, you can also use them in a burger, burrito or just plain! The taste is delicious and easy to digest because of our green infusion ;)
