Kaiserschmarrn' from Bavaria!

Guys, it's time for a classic. Long prepared by mum or dad, now it's time to reward ourselves. Kaiserschmarrn recipe to make at home. It doesn't get any better than this. The recipe remains classic with tips from home. So get to work!


 

Ingredients

  • 300ml milk

  • 200g flour

  • 50g sugar

  • 4 eggs

  • 50g butter

  • 20g sultanas

  • Icing sugar

  • 1 pinch of salt


Instructions

First mix the ingredients flour, sugar, salt, egg yolks and milk. You can also leave out the sultanas, like I did ;).


At the same time, in a separate bowl, whisk the egg whites until they are stiff. Then add this to the dough. Attention! The whipped egg whites should only be lightly UNDER-beaten. Do not stir with a mixer, otherwise it will fall apart.


Now preheat the oven to 180 °C convection.


Now heat the butter in the pan. Allow it to foam and brown slightly. Put the dough into the pan and let it brown, turning it once.


Then put the pan in the oven for 10 minutes. It should then turn a golden brown colour.


Now comes the most important part. Now comes the piece of home and the little tip. After the oven, we put the pan back on the cooker. Take 2 wooden spoons and pull the dough apart into small pieces. Now we add another piece of butter and icing sugar. This caramelises again in the pan and gives a wonderful crunchy and sweet taste!


It's best to leave it in the pan for garnishing. Add some more icing sugar on top and the applesauce, apple compote or damson jam. LOVE IT!

Ahhhh, just writing this makes me happy to cook this recipe again. A recipe from Tobi's and my home kitchen. Luckily we were brought up with it as children, because this is a dish you don't want to miss! Get inspired guys!!
