Hummus: Braised Carrots with Ras el Hanout and Poached Egg

Today, we present our own creation that comprises fresh hummus, tenderly braised Ras el Hanout carrots, a refreshing zucchini salad, and a perfectly poached egg. Hummus, a delightful specialty from the Middle East, enjoys worldwide popularity. Its main ingredients include pureed chickpeas, tahini (sesame paste), olive oil, lemon juice, and spices such as garlic, salt, and cumin. This combination yields a creamy, lightly spiced paste that can be served as a dip, spread, or side dish. This vegetarian dish impresses not only with its delightful flavors but also with its versatility.


 

Ingredients for Hummus, Braised Carrots, and Poached Egg

Hummus Ingredients

• 1 can of chickpeas (drained weight 265g)

• 100ml cold water

• 120g tahini

• 1 garlic clove

• Juice of 1 lemon

• 1/2 tsp salt

• 1/2 tsp ground cumin

• 1/2 tsp paprika

• 1-2 tbsp olive oil

Poached Egg and Zucchini Salad Ingredients

• 1 liter of water

• 80ml vinegar

• 1 organic egg

• 100g finely sliced zucchini

• 2 tbsp cooked chickpeas

• 1 tbsp black and white sesame seeds

• Salt and pepper

• A dash of olive oil

• A dash of white balsamic vinegar

• A handful of coriander

Braised Carrots Ingredients

• 6 baby carrots

• 50g feta cheese

• 100ml carrot juice

• 1 tsp Ras el Hanout

• Salt and pepper

• Some oil for frying

Hummus Preparation


Drain and thoroughly rinse the chickpeas from the can. Place the drained chickpeas in a tall container for blending. Add all the other ingredients and blend with an immersion blender until a smooth and uniform mixture is achieved.



Poached Egg and Zucchini Salad Preparation


Bring the vinegar water to just below boiling point. Crack the egg into a cup and create a whirlpool in the water. Gently pour the egg into the center of the whirlpool, allowing the egg white to envelop the yolk. Let it poach for about 4 minutes.


For the zucchini salad, peel fine strips from the zucchinis. Briefly blanch them in salted water. Now, add the remaining ingredients to the zucchini strips and toss everything together to create a flavorful salad.



Braised Carrots Preparation


First, preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) with both upper and lower heat elements. Next, peel the carrots and heat some oil in a pan. Sear the carrots on all sides until they achieve a slight browning. Then, add the Ras el Hanout to the pan and roast it to release the flavors. Deglaze everything with carrot juice, and transfer the carrots to a baking dish. Add feta cheese, season with salt and pepper, and roast in the oven for about 15 minutes.
