For all the womanizer out there - Salad with beetroot!

Beet is very versatile, which has already been discovered by the food industry. The beet is even in your strawberry pudding inside! Actually, it is so inconspicuous, but beet is defenitiv a "superfood" for us. From this we now create a crunchy beet salad.



Ingredients

  • 200g beet (cooked)

  • 1 carrot

  • 1 avocado

  • 1TL caraway seeds

  • Some feta

  • A handful of arugula

  • Oil/Vinegar

  • Salt/Pepper


Instructions

First, boil the beet in salted water with the caraway seeds for about 20 minutes (if you don't want to do this, you can buy pre-cooked beet in many supermarkets).


In the meantime, peel the carrot and grate finely with a square grater. Wash the arugula and dry it with a salad spinner. Halve the avocado and cut into small cubes. Once the beet is cooked, peel it (we recommend gloves here) and cut it into small cubes as well.


Now put all the ingredients in a bowl and sprinkle the feta in small pieces. Finally, season the salad with vinegar, oil, salt and pepper.



Resumé

Ideal for the quick hunger. Beet is often underestimated, but appreciated by students, like me. You should definitely include this "superfood" in your diet more often. Especially because it is cheap and brings wonderful nutrients with it. Let us, from food for flexitarians inspire you and try the beet salad.
