Bean-Burata Salad with Caramelized Peaches and Perfectly Poached Egg

Summer inspired us with amazing produce and its fresh flavors. Crisp beans and caramelized peaches lay atop a bed of cherry tomatoes. A poached egg cascaded over the masterpiece, while creamy burrata added depth to the dish. Truly a taste of summer, expertly uniting flavors and textures.







Ingredients for Bean Salad:

• 200g green beans

• Half an onion or alternatively, shallot

• 6 cherry tomatoes

• 3 walnuts

• Half of a peach

• 1 sprig of thyme

• A drizzle of olive oil

• Salt and pepper to taste

Ingredients for Pickled Radishes:

• 100g vinegar

• 250g water

• 50g sugar

• 6 radishes

• 1 tsp peppercorns

• 1 bay leaf

Ingredients for Poached Egg:

• One egg

• 100ml vinegar or white balsamic vinegar

• 1L water

Yellow Coral Chips:

• 120ml water

• 120ml rapeseed oil

• 27g wheat flour

• A touch of curry or turmeric

• A pinch of salt



Bean Salad Preparation:

Craft this delicious dish in just a few steps: blanch the beans, finely slice the onions, and quarter the tomatoes. Sauté everything in a pan until the flavors meld. Lastly, season to taste with spices – you're done.


Pickled Radish Preparation:

  • Begin by washing the radishes. Then, weigh the pickling mixture and bring it to a boil. Place the radishes in a glass jar and pour the hot pickling mixture over them.

  • Allow them to marinate for a while to intensify the flavor. These homemade pickled radishes add a refreshing touch to your dishes.


Poached Egg Preparation:

  • Fill a pot with water and bring it to a gentle simmer. Add a dash of vinegar to stabilize the egg white. Crack a fresh egg into a small bowl without damaging the yolk.

  • Create a gentle whirlpool in the simmering water with a spoon and gently slide the cracked egg into it. The egg white will delicately envelop the yolk. Poach the egg in the water for about 3-4 minutes, depending on your desired yolk consistency.

  • Carefully remove the poached egg from the water with a slotted spoon and let it drain on kitchen paper.


Coral Chip Preparation:


For the chips, simply combine all the ingredients in a bowl until a homogeneous mixture forms. Heat a pan and ladle a portion of the chip mixture into it. Fry until crispy.

Arrange everything beautifully on a plate.
