BBQ Bun with mushroom relish!

Updated: Jul 28, 2021

I was in the mood for a quick dish with crunch, flavour and freshness. The following trip to the fridge, three times of course. So you have to make the most of everyday ingredients. That doesn't mean it will be boring. No, it will be mind blowing. The lovely thing about BBQ buns is the vegan factor. In that, I'm telling you, you'll love it and you won't miss any kind of meat. The first bite into the vegan BBQ Bun caused astonishment, in a positive sense. Today we at food for flexitarians show you what we mean and hope to inspire you.

Ingredients

Dough:

  • 150g flour

  • 40 ml oil

  • 10 g sugar

  • Salt

  • 5g yeast

  • 30 min at 180 degrees

Bite:

  • 3 onion

  • 200g mushrooms

  • 2 cloves of garlic

  • 100 ml port wine

Dip/ Mayonnaise:

  • 200g chickpeas

  • Salt Pepper

  • 5g sabal olek

  • 1 lime squeezed

Instructions

Mix the ingredients for the dough as you see fit. I am no baking master either, but trust you to make a dough. The principle is similar to baking a pizza. In the end, the dough should simply not stick ;). Leave the dough to stand for about 30 minutes. Then shape and bake for 30 min at 180 C.

While the buns are in the oven, we do the rest. You can use many different ingredients for the topping. The basis is onions, lots of onions! Sauté them until they are golden brown. Halfway through, add the mushrooms and deglaze with port wine. Everything else can be expanded according to your wishes. Your inspiration is needed!

Now for our vegan mayonnaise. Somewhere in a corner there should be a can of cooked chickpeas. Separate them from the juice and save some of it.

Puree the chickpeas with some of the juice. Add a little lime juice and a spoonful of sabal olek. But watch out, it can get spicy quickly! With that we already have our dip.

For the mayonnaise, we take the remaining water from the can and mix it with rapeseed oil. It works best with a blender. Season, add lime juice and the mayo is ready!

Finally, we cut the buns in half, marinate the inside with mayo, dip and put in the onion and mushroom combo. Et Voilá , cet ca!

Resumé

Honestly, the buns are just great. They are easy to make and only need a little time in the oven. Everything can be done on the side. The vegan part is also a great side fact. So easy and so delicious. Let yourself be inspired and try them!
