White Chocolate Mousse with Vanilla Crumble, Plum Compote, and Fresh Berries

Ingredients For the white chocolate mousse:

  • 150 g white couverture chocolate

  • 200 ml cream

  • 20 g sugar

  • 8 g vanilla sugar

  • 4 eggs

  • 2 sheets of gelatin

For the vanilla crumble:

  • 100 g flour

  • 50 g butter

  • 50 g brown sugar

  • 1 pac. vanilla sugar

For the plum compote:

  • 300 g plums, pitted and diced

  • 50 g sugar

  • 1 tsp cinnamon

  • Juice of half a lemon


For decoration:

  • Fresh raspberries and strawberries

  • A few mint leaves

  1. Melt the white chocolate in a water bath and let it cool slightly.

  2. Soak the gelatin in cold water.

  3. Separate the eggs. Beat the yolks with sugar and vanilla sugar until creamy. Stir in the melted chocolate.

  4. Squeeze out the gelatin, dissolve it, and stir it into the chocolate mixture.

  5. Whip the cream until stiff and gently fold it in. Beat the egg whites until stiff and fold them in as well.

  6. Pour the mousse into glasses and chill for at least 4 hours.






For the vanilla crumble:

1.     Preheat the oven to 180°C (350°F).

2.     Mix flour, butter, sugar, and vanilla extract into crumbles. Spread on a baking sheet and bake for 15 minutes until golden brown.


For the plum compote:

1.     Heat plums with sugar, cinnamon, and lemon juice in a pot and simmer for about 10 minutes until the fruit is soft.


To serve: Garnish the chilled mousse portions with plum compote, crumble, fresh berries, and mint.
