Swiss mountain fun with potato rösti!

The potato is one of the most important foods in the world. For me, it is in some ways a super food. It can be processed as many ways as no other product. For example, to puree, fried potatoes, potato gratin, fries, Röstis and so on. In addition, they keep with the right storage eternities .Likewise as a home remedy, it should work some miracles. In many cultures, the potato plays an important role. It is cheap, little demanding in agriculture and makes full. The combination with avocado and arugula is completely vegan and therefore an ideal change for us flexitarians.


Ingredients


Rösti:

  • 500g waxy potatoes

  • salt pepper

  • nutmeg

  • Rapeseed oil for frying


Avocado cream:

  • 1 avocado

  • 2 cherry tomatoes

  • Half teaspoon ground cumin

  • Half teaspoon paprika powder

  • Salt Pepper

  • 1 half shallot

  • Lime juice from half a lime

  • Fresh herbs, if desired, such as chives, parsley or even cilantro

  • Additional components:


Fresh arugula, cooked beet, one avocado, radish


Instructions

Preparation Rösti:

Peel the potatoes and shave them with a square grater on the coarse side. Squeeze the sliced potato, the potato juice is not needed. Season the mixture with salt, pepper and nutmeg. Then heat some sunflower oil or canola oil in a coated pan. In the next step, pour in about a full tablespoon of the potato mixture and flatten it slightly. Now fry the Rösti over medium heat until golden brown on both sides.


# Röstis can also be wonderfully frozen after frying.


Preparation of avocado cream:

For the cream, cut the avocado in half. Using a spoon, scrape the inside of the avocado out of the skin and place in a bowl. Drizzle with lime juice and mash together with a fork. Peel the shallot and cut into fine brunoise and add to the avocado as well. Quarter the cherry tomatoes and add to the avocado cream. Season to taste and, if necessary, finely chop fresh herbs and fold in.


Now spread the potato rösti with avocado cream. Then garnish with other components such as fresh arugula or cooked beet.


Resumé

Quick, easy, delicious. Great example of the versatility of the potato. Also, a completely vegan dish. Rösti can also be used and combined in many ways. For example, it also tastes great with applesauce.
