Summertime is salad time - The tuna salad

Tuna salad is a delicious and light meal for a balanced and healthy flexitarian diet. If it has to go fast again, but you still want to do something good for yourself and your body, our Tuna Salad from food for felxitarians is just right for you. The tuna has extremely good nutritional values and is ideal for a "low carb", "low fat", and "high protein" diets. Canned tuna is always available in any grocery store throughout the year. Nevertheless, when buying tuna, look for a seal of quality that shows that the fish has been caught and processed in a manner appropriate to the species. We at food for flexitarians prefer to eat the tuna salad on hot summer days, as it is easy to digest and super fresh.


Ingredients

  • 150g mixed lettuce

  • 50g feta

  • 50g mushrooms

  • 1 zucchini

  • 1 spring leek

  • 1 clove of garlic

  • 1 can of tuna

  • Some fresh coriander

  • Olive oil/sushi seasoning

  • Lemon juice and lemon zest

  • Salt/Pepper


Instructions

When it comes to preparation, I like to let the chaos take over. Especially when it has to go fast. The zucchini, mushrooms, garlic and spring leeks are coarsely chopped and briefly sautéed together in a pan. The lettuce is washed briskly and then dried with a salad spinner.


Now all the ingredients are placed in a salad bowl and freshly plucked cilantro, as well as the feta, is sprinkled on top. Next, dress the salad with olive oil, sushi seasoning, fresh lemon juice, lemon zest, and salt and pepper.

Finally, the canned tuna is folded into the salad.


The vegetables can be expanded according to individual taste. To give your dressing that special "kick", we at food for flexitarians recommend adding some grapefruit juice.

Since for many people coriander has a soapy aftertaste, you can easily replace it with mint.
