Ingredients
20 g fresh yeast
approx. 300 ml water
300 g spelt flour (type 630)
150 g rye flour (type 1150)
2 tsp salt
200 g sour cream
200 g sour cream/cream fraiche
approx. 150 g diced ham
2-3 stalks spring onions
salt and pepper
Instructions

Dissolve the yeast in the water with a pinch of sugar and let stand briefly.
Add flour and salt and knead into a dough using a food processor.
Cover the dough and let it rise for at least 1-2 hours, preferably overnight at room temperature.
Of course, it is better to let the dough stand longer, as this makes it looser and softer. You can also prepare the dough a day earlier and leave it at room temperature.
Preheat the oven to 250 °C top/bottom heat.
Divide the dough into 6-8 pieces on a well-floured work surface, flour, flatten and pull apart and place on a floured baking tray. You could almost think you were forming a small mini pizza.
Mix sour cream, crème fraîche, salt and pepper and spread generously on each piece of dough.
Spread the bacon cubes on top.
Then bake for 20 minutes.
Meanwhile, chop the spring onions and sprinkle over the patties after baking.
Resumé
Some people know the Rahmschmankerl from the Christmas market. Unfortunately, these are only available during the Christmas season, but I think it's also great for the cold months afterwards. Especially if you take some time with the preparation, you can also bake the cream bread for parties or together with friends. Of course, you can also relax and leave out the bacon and create a vegetarian dish. It's a real treat and definitely worth trying out!
