FAQ
Why wild salmon instead of farmed?
Wild salmon is leaner, more flavourful and comes without the additives of aquaculture — a better fit for a mindful, flexitarian approach. Farmed salmon works too but tastes milder and fattier.
Can I make this vegetarian?
Yes — leave out the salmon and add sautéed mushrooms or pan-fried feta instead; the creamed spinach carries the dish without fish. A poached egg adds extra protein.
How do I get the creamed spinach really creamy?
Sauté the spinach with onion and garlic, deglaze with broth and white wine, and let it reduce before stirring in cream and cream cheese. Nutmeg and lemon zest round it off without making it heavy.
