Salmon Spaetzle with Creamed Spinach – Easy High-Protein Recipe for Flexitarians

Craving a creamy, satisfying meal that’s packed with protein and flavor? This egg spaetzle with wild salmon and homemade creamed spinach is a total game changer! Super easy to make, perfect for meal prep, and loaded with nutrients – a must-try for flexitarians and fitness lovers! 



Ingredients for salmon spaetzle creamed spinach


- 250 g fresh egg spaetzle

- 150 g wild salmon (not farmed salmon!)

- 200 g fresh spinach leaves

- 100 g feta cheese

- 100 ml vegetable stock

- 100 ml cream or HaferCuisine

- 50 g cream cheese

- 50 ml white wine

- 1 small onion

- 1 clove of garlic

- 1 tbsp butter

- 1 tsp mustard

- 1 tsp olive oil

- 1 tbsp fresh dill (chopped)

- juice & zest of 1 organic lemon

- salt, pepper, nutmeg



Instructions for salmon spaetzle creamed spinach

Make the creamed spinach:

In a stainless steel pan (Tip: preheat for 10 minutes for perfect heat distribution!), melt butter and sauté onion & garlic. Add spinach, deglaze with broth & white wine. Stir in lemon juice & zest, let reduce. Add cream, cream cheese, mustard, dill, salt, pepper & nutmeg. 


Prepare spaetzle & salmon:

While the spinach is simmering, place **egg spaetzle and diced wild salmon in a baking dish


Bake:

Pour the creamy spinach mixture over the spaetzle & salmon, mix well. 

Bake at 200°C (392°F) for about 20 minutes until the salmon is perfectly tender and flavors meld together. 


Enjoy! 

Serve immediately with a squeeze of lemon juice & fresh dill on top.
