This is the beginning of my favorite season, "spring". Everything starts to bloom and finally the dreary winter passes. Thank God I have no pollen allergy and can therefore spend time outdoors carefree. Finally back in his own garden and even things for his lunch, or dinner pick. We are talking about fresh wild herbs. These include dandelion, nettle, sorrel, marigolds, yarrow, or watercress. Who owns now no domestic garden, which should make for example times an excursion into an urban park, or simply a large meadow before the city to visit. We at food for flexitarians love the wild herb salad, because it is usually one of the first salads that you can harvest and it is really very easy to prepare. There is also no "right or wrong" with the salad, you just mix together what the find gives you.
Ingredients
2 handfuls of nettle leaves (the young leaves from the upper part of the plant)
2 handfuls of dandelion leaves (the young leaves)
1 handful of daisy flowers
1 handful of watercress
Some fresh lamb's lettuce
Some olive oil and balsamic vinegar
Fresh herbs (for example chives, dill, parsley, mint)
Salt/pepper
Instructions
Wash fresh herbs and purchased lettuce properly. Since self-picked wild herbs come fresh from nature are often small insects, or soil on the flowers and herbs.
Then drain the water well or spin very carefully in a salad spinner. Mix the wild herbs in a nice salad bowl and fold in fresh herbs. Season with a little salt and pepper. Marinate with a little olive oil and balsamic vinegar (you don't want to drown out the flavor of the individual wild herbs too much). Garnish with daisy flowers.
Resumé
Great and simple salad. Especially picking and then preparing it yourself is extremely fun. The salad can also be eaten very well without dressing, then the taste of the individual components comes out even better.
