Lemon Cake Sinner - Part II

You know that feeling when you're craving a piece of lemon cake all the time? Yes, then you are exactly right here. The whole time I wanted to approve a piece me in the cafe, but I found none. Yes, it was so sad. Finally I decided to bake the cake myself and asked my Mom for her secret recipe. The recipe for the lemon cake was actually not so secret, but still really delicious!

 

Ingredients

  • 200g spelt flour

  • 150g sugar

  • 150g mascarpone

  • 125g soft butter

  • 100g roasted pistachios

  • 100g powdered sugar

  • 1tl baking powder

  • 1 lemon

  • 2 eggs

  • salt


Instructions

  • First, we turn on the oven and heat it to 150 °C convection.

  • Then we mix the soft butter with the sugar. For this, we take a whisk and stir with it until everything becomes very creamy.

  • Then add the eggs one after the other.

  • The lemon is now grated until we have all of the zest. Of course, we want more and squeeze it! This gives the extra flavour.

  • Lemon, flour and mascarpone are added to the mixture and mixed together.

  • Finally, we add the baking powder, a pinch of salt and pour the mass into a cake pan, which is ideally already greased. You are welcome to dust the pan with flour beforehand. This will make it easier to turn the cake out of the pan later.

  • Now the good thing comes into the oven and may spend there about 1 hour. In between, you can poke the dough with a wooden stick or toothpick. Ideally, no dough sticks to it and the cake is ready!

  • After the oven we let the dough best about 15 minutes still standing and cool. Gladly for it on the balcony. Then we turn it out of the mold.

  • Finally, mix the powdered sugar with 2 tablespoons of water and pour the icing over the cake. Swivel the cake on the plate, so that the icing can run elegantly over the edge;). Add the pistachios and here we go!

Resumé


The preparation looks much longer than it actually is. The preparation is very basic and can be mastered with ease! The mascarpone makes the cake nice and juicy and squeezy, which I love so much! In addition, you have almost all the ingredients already at home and can start right away!
