Green Asparagus salad

Green asparagus is a German delicacy and is harvested and eaten from the beginning of May to the end of June. However, it is not very well known worldwide and is grown almost exclusively in Germany. Green asparagus, on the other hand, can be bought almost all year round and is known worldwide. However, it has to be imported, especially in the cold months. Today we show you a quick and delicious green asparagus salad.


 

Ingredients

  • One bunch green asparagus

  • 100g lamb's lettuce

  • 50g strawberries

  • 1 hand of mixed cherry tomatoes

  • 1 hand of feta cheese

  • 1/2 Juice of half an orange

  • Light balsamic and olive oil

  • A dash of Sushi Seasoning

  • Salt and pepper


Croutons for garnish

  • 2 slices of toast

  • 50g butter

  • 1 sprig rosemary

  • 1 clove garlic

  • A pinch of salt


Instructions

First we bring a pot of salted water to the boil.


Then cut off the lower part of the asparagus generously. Now blanch the green asparagus in the salted water and then rinse in ice water. Cut the asparagus into bite-sized pieces and place in a bowl.


Now wash the lamb's lettuce, strawberries and cherry tomatoes well. Then quarter the cherry tomatoes and strawberries and add to the green asparagus.


Crumble the feta cheese and add to the salad.


Finally, marinate the whole thing with salt, pepper, olive oil, light balsamic vinegar, a dash of Sushi Seasoning and the juice of half an orange.


For the Croûtons

Cut the toast into cubes. Heat the butter in a pan until it foams and add the rosemary and garlic. Fry the croutons in the butter until golden brown. Drain and leave to drain on kitchen paper.


Resumé

This salad is especially good for hot summer days. The strawberries and the fresh orange juice bring the right freshness to the salad. Also a big plus is the quick preparation time. We at food for flexitarians hope you enjoy cooking.
