
At almost every barbecue you can find the herb butter. It tastes perfect with roasted meat or fish, toasted bread and grilled vegetables. However, today we at food for flexitarians show you our wild garlic butter. It tastes at least as good, and since April and May are wild garlic season, you should definitely work with fresh and wild garlic. We already presented to you the wild garlic soup and pesto, check it out! To be able to prepare the wild garlic butter, you should go to shady, damp forests and pick it fresh there.
Ingredients
250g butter (room temperature)
80g fresh wild garlic
1 tablespoon olive oil
lemon juice and zest of one lemon
salt/pepper
Instructions
First, wash the freshly picked wild garlic very well (since, the wild garlic comes fresh from nature, can be especially soil and small animals on the leaves). Then dry the wild garlic in a salad spinner (alternatively, drain the wild garlic well in a sieve).
Second, chop the wild garlic into small pieces. Put the softened butter in a bowl and add the chopped wild garlic. Grate the lemon zest with a Microplane, squeeze the lemon juice with a lemon squeezer and add both to the butter as well.
Third, add a little olive oil and season with salt and pepper. Now mix everything well with a fork (this process can of course also be done in a food processor with a whisk). Finally, place the butter again in the refrigerator for about 30 minutes.
Tip: For the sharpness can be added, for example, chili flakes.
