The eight-armed monster - Octopus salad

The eight-armed octopus belongs to the octopuses and these animals are enormously intelligent. In addition, there are many scary seafarer stories about huge eight-armed sea monsters, which are said to have smashed entire fishing boats ;). In itself, however, the octopus is harmless to humans. Because it belongs to the mollusks, the octopus is properly prepared is an absolute treat for the mouth. Again, time is the key. It takes about an hour until the octopus is soft. Before that, it is often tough and therefore not edible. Livehacks like using a wine cork for cooking, I think here is an absolute nonsense. It tastes good as a classic salad or with corn, potatoes and leeks.


Ingredients

  • 1 octopus about 1.3 kilograms

  • 400g canned corn

  • 1 leek

  • 20g olives

  • Some fresh parsley

  • 50g cooked potatoes (firm boiled for fried potatoes)

  • 1 shallot

  • A dash of white wine

  • Some oil for frying

  • 100 ml vegetable broth

  • A dash of cream

  • Salt Pepper

Instructions

First, bring a large pot of water and some salt to a boil. Once the water has come to a boil, add the octopus and turn down the temperature (you don't want the octopus to boil in the bubbling water). Now simmer for about 40 minutes.

Do a check by pricking it with a needle or a knife. If it comes out easily, it should be done. Then cut the octopus into slices.


In the meantime, drain the canned corn. Peel and chop the shallot. Then sauté the shallot in oil, add the canned corn and olives (without pits) and sauté. Season with salt and pepper. Deglaze with white wine, add vegetable stock and simmer for 20 minutes. At the end add some cream and mix with a blender to a puree.


Next, cut the cooked potatoes into slices. Cut the leek into slices as well. Then fry the potatoes in a pan with oil until golden brown on both sides. Last but not least, add the leeks and heat. Season with salt and pepper.


Now arrange all the components nicely and to best effect on a plate.


Resumé

Prepared properly, an absolute treat for the palate. Octopus is super tender when cooked properly. A little more time-consuming, but the work is worth it! An unusual dish that is not every day on the menu. Food for flexitarians has dared of course and would like to inspire you! Run to the stove!
