The days are getting shorter again, it's getting colder outside and you're happy about a fire in the fireplace. For me just the right time to cook a childhood memory after. It is about rice pudding. Classically it is served with cinnamon and sugar or with fresh fruit. I find rice pudding a great dessert because it is prepared very quickly and can be combined with many different things. Have fun cooking and enjoy.
Ingredients
Milk rice
250g rice pudding
500ml milk
500ml cream
4EL sugar
1 vanilla pod (alternatively 1 pack vanilla sugar)
Caramelized walnuts
100g sugar
100ml water
150g walnuts
Plum compote
500g plums
50g sugar
100ml white wine
Lemon juice and zest of one organic lemon
One cinnamon stick
Instructions
Milkrice
For the rice pudding, put cream and milk in a pot. Cut the vanilla pods in half with a knife and scrape out the vanilla pulp. Add the vanilla pulp, the pod, the sugar and the rice pudding to the pot as well and bring everything to a boil. Stir well with a whisk during the entire cooking time so that the rice pudding does not burn. After about 20 minutes the rice pudding is ready. (The grain should not have any bite left).
Caramelized walnuts
For the caramelized walnuts, put water and sugar in a pan and heat it. The water will now evaporate and after a short time the sugar will start to caramelize (it will turn brown). Now add the walnuts and keep stirring until no more sugar crystals can be seen on the nuts. Now put the nuts on a baking tray with baking paper and let them cool down (be very careful with caramel because it is very hot).
Plum compote
For the plum compote, wash the plums, cut them in half and remove the pit. Then caramelize the sugar in a pot. As soon as the sugar starts to brown, add the plums and deglaze with white wine. Now add the cinnamon stick and let everything boil down for about 20 minutes. After 20 minutes, add fresh lemon juice and zest to taste.
Now arrange everything together on a plate and enjoy.
Tip: fresh mint rounds off the dish perfectly.
Resumé
Caramelizing the nuts is perhaps something for more experienced cooks, but they enhance the dish positively with their crunch. But for me, the rice pudding does not necessarily need many additional components because I simply love rice pudding.
