It's lunch time and you're sitting in your home office. You don't feel like spending money on lunch again. It's already too late to order, because I'm hungry now! That means we have to prepare something ourselves. Please fast, great and tasty? Coming right up!
Ingredients
2 slices of bread (old bread is also welcome)
2 eggs
1 avocado
1 lemon (zest)
1 clove of garlic
2 tablespoons olive oil
100g mushrooms
50g feta
10g butter
20 ml port/red wine
salt/pepper

First, we add the olive oil and butter to the pan and heat it over medium heat. The small piece of butter serves as a flavor carrier here and gives a little extra kick. It's also best to use a metal pan so that the roasted flavors come out nicely today (Maillard reaction).
The two slices of bread and toast in the pan from both sides. For this you can also use old slices, even if the bread has been standing for a few days.
After the bread slices are crispy, we take them out and put them aside.
While the bread is crisping, chop the mushrooms and smash the garlic. smash not cut!
We put again some oil and a piece of butter in the pan, plus the mushrooms and the garlic. We let them sweat slowly and at the end we deglaze them with a shot of port wine and salt them heavily. It gives a special sweetness and harmonizes wonderfully with the butter.
At the same time we cook our poached egg. Of course you can use your favourite tactic. Water with vinegar or wrapping the egg in foil is up to you.
Now the mushrooms should be melted with the wine, reduced and we can serve.
On the bread slices we spread the avocado, feta, mushrooms on top, and of course the egg. Leave the garlic in the pan, but grate some lemon zest. Do not forget salt and pepper and we are ready.
Resumé
The dish is top class. With dressing everything takes only 20 minutes and tastes so delicious. Especially the lightness wins once again and in the end you feel like a gourmet.
